Mwan. Shi has completed her Garnet costume and it's gorgeous. Feeling like a sluggard in comarison. Must get cracking.

Mini pies go in the oven for 25 minutes at 400 degrees. Mini loaves go in for 17 minutes at the same temperature. Need to write this down and stick it inside the flyleaf of _The Joy of Cooking_ or something. And experiment with an apple pie recipe that's less sweet.

'K, I never thought I'd think apple pie was too sweet. But when you're essentially eating one-fifth of a pie by yourself, that's a lot of sugar. And I've *got* to find an easier way to peel apples. The method I was using last night was quartering them, cutting out the core, and then using a hand-peeler. Any suggestions? I was mixing my apples; the Fujis were easier to peel than the Red Delicious, which have a mealier texture and kept breaking. I don't care much for Red Delicious (Fuji apples! Or Pink Lady!) so I wanted to be rid of them.

Awake again now, though, and hungry, and with three assignments to complete before I go to work, so off I go to feed and then write HW.

Your apple pie was probably too sweet since you used eating apples, not baking apples. Piny Lady, Braeburn and especially Granny Smith are perfect for pies. Don't use Red Delicious, it's too sweet and grainy, it'll break down when cooked. When I peel apples, I do it like they do in the old days, all in one big strip off the apple using a hand peeler, then quarter and deseed.

Ahh. Was going by _The Joy of Cooking_, which says that Granny Smiths aren't so suited for pies because they don't lose their firmness.
