Pie recipe
Aug. 18th, 2003 10:33 pmPies turned out well. "Not too sweet," as my mother, who dislikes things that are too sweet, put it.
Recipe for filling: 3 cups nectarines (skinned and sliced 1/4" thick), 2 cups blueberries, 3/4 cup sugar, 3.5 tablespoons cornstarch, 1 tablespoon lemon juice, 1/8 teaspoon salt. Mix and let sit for ~15 minutes while preheating oven to 425 degrees. Pour into pie crust, dot with 2-3 tablespoons butter in small chunks, put top crust on, cut steam vents, put in oven above a baking sheet for 30 minutes, lower temperature to 350 degrees, bake for 25-35 minutes, until filling is bubbling. Remove, let cool, enjoy.
